Shrimp and Apple Salad


1 c. cooked, cleaned shrimp
2 med. apples, diced
1 med. green pepper, cut in narrow strips
8 pimiento-stuffed green olives, sliced
1/4 c. mayonnaise
1 tbs. freshly squeezed lemon or lime juice
salad greens

Combine shrimp, apples, pepper and olives.
Blend mayonnaise with lemon juice.
Add to shrimp mixture and toss; chill.
Serve on salad greens.
Serves 4.
